Eggplant, an emblem of Mediterranean cuisine, this vegetable creates an infinite variety of preparations, whether grilled, baked, pan-fried or even stewed.
Combined with tomatoes or other Provençal vegetables, and Provencal herbs, it offers a range of flavours, whether through classic dishes such as ratatouille, tian, moussaka often made in Mediterranean or French cuisine. Eggplants are also part of original creations such as parmigiana. Italian, one of my favorite dishes. Take advantage of the summer season to enjoy its generous flavours in simple and friendly recipes, ideal for family meals.
